Defending yourself with a knife or any other tool or cover (landscape furniture and so on) is a state of mind first. Try to deflect or avoid being hit with a blade and check if you note more options than before for beneficial movement. For example first get out of the way of a strike before you press your sharpened stick to someones throat. Strike the elbow of the person strangling you with the butt of the knife before you stab him in the groin and so on. Be economical in your movement and relaxed. A tensed arm looses a blade much sooner than a relaxed arm. Try it out.
